Bread making is on the rise. While everyone may not be gifted with the skills of a baker, this simple British Virgin Islands style johnnycake is an easy staple to make at home. The name johnnycake is believed to have derived from its original "Journey Cake" title meaning a bread that can be prepared for travel.
Cook up a batch as an accompaniment to a savory main dish. Salt fish or lobster are the options of choice
in the British Virgin Islands.

Ingredients:
3 ½ cups flour
1 ½ tbs salt
½ cup cornmeal
2 ½ tbs baking powder
1 ½ tsp salt
¼ cup brown sugar
½ cups water
1 cup milk
2 tbs oil
2 tbs Crisco or butter
Oil for frying
Recipe:
Blend the flour, cornmeal, sugar, salt, baking powder and crisco or butter.
Gradually add oil, water and milk until the mixture resembles crumbs.
Shape into golf-ball-sized rounds and flatten to disks.
Heat a small quantity of oil in a frying pan and fry the dough until golden.
Remove and eat hot while you plan your next visit to the British Virgin Islands.
